- The rise of functional foods in our daily diet reflects a global shift towards nutrition that not only sustains but also enhances health and well-being. Functional foods, though lacking a uniform definition, are recognized for their ability to provide health benefits beyond basic nutrition. Among these, probiotic foods stand out for their role in promoting gut health and overall wellness. Probiotics, defined as live microbial supplements that improve intestinal microbial balance, have demonstrated efficacy in modulating the immune system, lowering cholesterol, and alleviating conditions such as diarrhea, constipation, and urinary tract infections. Despite the widespread availability of probiotic products, their incorporation into processed cheese and cheese spreads remains underexplored, particularly in the Indian market. Processed cheese, a staple in direct consumption and sandwich preparation, offers a promising platform for enhancing functionality through probiotic fortification. This study focuses on the development of a probiotic processed cheese spread, optimizing probiotic inoculum levels and characterizing the final product to meet consumer demand for health-oriented functional foods. The findings aim to contribute to the growing market potential of probiotic-enriched processed cheese, providing a novel approach to combining convenience with health benefits.
